
Renal Diabetic Exchange Lists
Alternate values in the table below are derived from the specific Renal Exchange Lists which divide foods into three categories consistent with the Academy "Making Choices: Meal Planning for People with Diabetes and Chronic Kidney Disease Stages 3 and 4.1 The Toolkit addition has potassium fruits/vegetables divided into three categories, low potassium (lK) 0-200, higher potassium (hK) 200-400 (Average 300) and very high potassium (vhK) (400+). When using to estimate dietary intake see the average values for each exchange category in parenthesis.
USDA National Nutrient Database
Available at: USDA National Nutrient Database. Individual food values can be located by searching for a food item, or searching by nutrient within a food category. For example if you are interested in knowing potassium values for cheeses, select the Nutrient List tab, select potassium and then select the food category Dairy. However if you specifically only want to see Cheddar Cheese, use the Food Search feature and select the food item. You can then change the quantity at the top to match the exact amount that you are interested in (1 oz. or 1 slice). It will recalculate the values for that portion size.
Krause Textbook
Krause, 14th Ed shows potassium foods in Appendix 29 in three categories, Low Potassium (5-150, Medium 150-200 mg and high 250-500 mg. The items in italics below are different from Krause's list since the cut-offs are slightly different and portion sizes may vary the items on the borderline move into a different category.
