The style of this publication and the information it contains are unique. Using a case-study approach, we offer students, practitioners and clinicians the opportunity to analyze the circumstances of the case as described by the patient and then draw on the evidence base to treat the condition. In the course of that process, we introduce the new dietetic tools and concepts needed to treat the case, showing how they take effect.
The Celiac case includes 17 activities for Instructors to choose from. Fourteen of those activities are ones that would normally occur within the 60-90 minute outpatient consultation with Eloise. One activity is designed as a self assessment intended to be similar to the process that a dietitian would do when they are preparing fro a consultation for a type of medical condition that they do not normally see. There are two additional optional activities that are more academic in nature and would not be part of a normal consultation with a patient. One of these activities includes advice that would be given to a food service operation to enhance the number of gluten-free items as well as how to clearly identify these products.
